Ingredients

For the Dough

  • 2 cups all-purpose flour (maida)

  • 4 tablespoons ghee

  • A pinch of salt

  • Water as needed

For the Filling

  • 1 cup khoya (mawa)

  • ¼ cup powdered sugar

  • 2 tablespoons chopped almonds

  • 2 tablespoons chopped cashews

  • 2 tablespoons raisins

  • 2 tablespoons desiccated coconut

  • ½ teaspoon cardamom powder

Method

Step 1: Prepare the Dough

In a bowl, mix flour, ghee, and salt. Rub the mixture between your palms until it resembles breadcrumbs. Gradually add water and knead into a firm dough. Cover and rest for 20 minutes.

Step 2: Prepare the Filling

Lightly roast the khoya in a pan on low heat for 2–3 minutes. Let it cool.
Add powdered sugar, nuts, raisins, coconut, and cardamom powder. Mix well.

Step 3: Shape the Gujiya

Divide the dough into small balls and roll into small circles.
Place 1 tablespoon filling in the center. Fold into a half-moon shape and seal the edges. Use a fork or twist the edges traditionally.

Step 4: Bake

Preheat oven to 180°C (350°F).
Place gujiyas on a lined baking tray. Lightly brush with ghee.
Bake for 20–25 minutes or until golden brown.

Let them cool completely before storing.

Storage & Safety Tips

  • Store in an airtight container once completely cooled.

  • Best consumed within 4–5 days.

  • Always use fresh khoya to prevent spoilage.

  • If the weather is warm, refrigerate and bring to room temperature before serving.
